These spicy, sweet, vinegary peppers are a great addition to any savory meal: eggs, burgers, hors d’ oeuvres, etc. Simple preparation and awesome flavor!
Ingredients:
4—5 jalapeño peppers, depending on size
1C water
1C white vinegar
2t sea salt
1t black pepper
2T local honey
Instructions:
Slice the jalapeños, keeping the seeds in for more heat, or removing them for less heat. Set aside.
Bring water, vinegar, salt, and pepper to a boil, then simmer on low heat.
Put sliced peppers in a sealable canning-type jar, and drizzle the honey over them.
Add the hot pickling liquid (carefully & slowly) to the jar and cover the peppers completely.
Put the lid on the jar, invert several times, and refrigerate for 1 week.
